These beans are a Trinitario variety grown by a co-operative in the Dominican Republic known as ‘La Red’. The Dominican Republic is known for its great genetic diversity on cocoa farms, leading to very different flavours across the region. I give these a moderate roast and the beans express a deep complexity of flavour. Expect a rich chocolate with notes of lemon citrus, tamarind and caramel.
