These are the crushed and roasted centres of the cocoa beans used to make chocolate. The Dominican nibs in particular come from an organic co-operative known as ‘La Red’ and express a more intense flavour than the Belize and Venezuelan nibs. Nibs while not being a nut can be used in similar ways in baking/cooking alongside eating them as they are.
